Healthy pickled beets

  • Eight large, fresh beets
  • 1 cup vinegar
  • ½ cup sugar

  3. Make the Pickling Solution: In a small saucepan, combine the vinegar, sugar, whole cloves, whole allspice, and salt. Heat the mixture until it reaches a boil, which should take about 5 minutes.
  4. Pickle the Beets: Pour the hot pickling solution over the sliced beets. Ensure that the beets are fully submerged in the solution.
  5. Refrigerate: Cover the basin and refrigerate the beets for at least one hour to allow the flavors to meld.
